Super easy and guilt free! I love snacking and especially baked goods. This snack is so healthy and light that you can have it anytime and fulfills that muffin/ bread craving.
Macros per muffin: (makes 12)
Protein: 10.5 gr
Carb: 1.7 gr
Fiber: 1 gr
Fat: 1.6 gr
4 scoops whey (I used pumpkin pie by NutraBio)
1/4 cup almond flour
1/2 cup pumpkin pure
1 whole egg
1/2 cup egg whites
1 tea spoon baking powder
1/2 teaspoon truvia (optional)
1/2 teaspoon pumpkin spice seasoning
Mix all ingredients well until smooth and creamy. Pre heat oven to 350 degrees. Use oil spray on muffin tray or cupcake molds (i use paper and still spray a little on paper to avoid sticking). Bake for 15 minutes or until you can poke with a tooth pick and no batter sticks.
